Have a hankering for something sweet?

Jelly tots vegan pouring cake

This cake is a sheer delight and absolutely easy to whip up. What makes it a big hit at birthday parties and celebrations is that it looks as if a bag of jelly tots is pouring hundreds of jelly tots out, all over the cake. What could be more festive and fun than hundreds of colourful jelly tots simply pouring everywhere? This is the cake to make if you want to bring a little bit of joy into somebody’s day. The following recipe serves 8.

What you need for the cake:

  • 1 x 650g vanilla cake mix
  • 9 tablespoons of aquafaba (equivalent of 1 egg)
  • 2/3 cup of cooking oil

What you need for the icing:

  • 240g of vegan marge/butter (make sure this is softened)
  • 4 cups of sieved icing sugar powder
  • 2-3 tablespoons of soya milk
  • 1 teaspoon of vanilla essence

What you need for the décor:

  • 6 sugar cones
  • Jelly tots (original flavour works best)

What to do:

Making a jelly tots vegan pouring cake is fairly easy. Here’s what you need to do.

How to make the sponge cake:

  • First, preheat the oven to 180 degrees Celsius.
  • Grease 2 cake tins (around 20cm each).
  • Empty the box of vanilla cake powder into a bowl and make a well in the centre of it.
  • Into the hollowed well, add the milk, aquafaba, and oil.
  • Beat the ingredients together with a hand mixer until the mixture is smooth and free of lumps.
  • Pour equal amounts of the batter into each cake tin and then pop both tins into the oven for 25 minutes or until the cake is cooked through. You can use a skewer to check if the cake is cooked through before you remove it from the oven.
  • Leave the cakes in the tin to cool for around 10 minutes. After 10 minutes, remove the cakes from the tins and place them on a cooling rack.

How to make the icing:

  • Place the butter/marge into a bowl and beat until smooth and creamy.
  • Take out a third of the sieved icing sugar and add it to the creamed marge. Beat it on low speed.
  • Gradually add icing sugar while beating slowly until all of the icing sugar has been added. You will need to scrape the sides of the bowl regularly during this process.
  • Only add 2 or 3 tablespoons of extra soya milk if the icing appears too dry.
  • Add the vanilla essence when you are happy with the consistency.

How to put the cake together and decorate:

How you decorate the cake will determine just how impressive it is, so take the time to follow these simple instructions carefully.

  • Take one of the vanilla cakes and place it upside down onto the counter or cake stand. You can stop the cake from slipping around if you put a small dollop of icing cream just beneath the bottom cake layer.
  • Put a few dollops of icing cream onto the cake and spread it around generously all over the cake.
  • Place the second vanilla cake upside down on top and neatly spread the rest of the icing cream over both the top and sides of the cake. You can use a flat spatula to keep the icing smooth and neat.
  • Press an upside-down sugar cone into the middle top of the cake. Make it slant slightly and then spread icing cream all over the outside of the cone.
  • Push jelly tots into the icing cream all over the cone and down onto the cake top and down the side.  You want it to look as if jelly tots are pouring all over the cake.
  • Pop the empty jelly tots bag onto the end of the cone so it looks as if it is pouring.

All that’s left to do is sink your teeth into this sweet and creamy jelly tots cake! It’s the perfect combination of colourful and yum!
