- 1 x 125 ml tin of crushed pineapple
- 1 x 385 g can of condensed milk
- 2 x cups of heavy whipping cream
- 2 x packets of mini marshmallows
- 230 g of ginger biscuits (crushed)
- 90 g of melted butter
- 1 x teaspoon of vanilla extract
- 1 x lemon (juiced)
- 1 x 24cm pie dish (or similar)
What to do:
- The first step is to melt the butter so that it’s easier to work with. Then, in a bowl, mix the crushed ginger biscuits with the melted butter to make a mushy biscuit-like paste.
- Using your fingers, press the butter and biscuit mixture into the base and sides of the pie dish – this will form a crust. Once you’re happy with the crust you’ve created, place the pie dish into the fridge to chill. This will help the crust harden a little, too.
- Grab a large mixing bowl and mix the lemon juice and condensed milk together.
- Now, whip the cream in another bowl until stiff peaks form – this should only take a few minutes. Then, gently fold in the condensed milk mixture with marshmallows, pineapple, and vanilla.
- Now, pour the mixture into the biscuit crust to form an even layer and then place the pie tin into the fridge for an hour to chill.
