Magwinya Recipe – a Delicious South African Treat

October 6, 2023

The magwinya recipe (also known as vetkoek, amagwinya or fat cake) is a South African street food made from deep-fried dough. It’s a traditional dish served throughout the country, with each region having its own variation on how it’s prepared and served.

Introducing the magwinya recipe – A delicious South African treat

Fat cake (amagwinya in English) is a type of fried dough which is typically served as a snack or meal. The dough is made from flour, yeast, sugar and salt that has been mixed together and kneaded into a soft dough. After it’s kneaded, the dough needs to be left to rise before it can be shaped into
round balls and deep-fried in hot oil.

Once fried, the magwinya can be served with a variety of fillings such as mince, cheese, chilli, samp or anything else you want to add. It’s also commonly served with chutney and gravy for extra flavour. Magwinya is usually eaten warm from the fryer and is often enjoyed with friends or family.

The origin of magwinya

Magwinya is believed to have originated from the Xhosa people in South Africa. The Xhosa are known for their traditional cooking, so it’s no surprise that they would come up with a delicious snack like magwinya.

Today, magwinya is enjoyed by many and can be found all over the country. There are also variations of magwinya found in other African countries such as Zimbabwe, Namibia, Botswana and Zambia. In these countries, it’s known as vetkoek or fat cake but the basic ingredients and method of preparation remain the same.

An easy magwinya recipe

Magwinya is a popular South African fried dough snack that is typically sold by street vendors. Also known as “vetkoek” or “fat cakes,” magwinyas are crispy on the outside and soft on the inside, making them the perfect snack for any occasion. Here is an easy magwinya recipe to follow at home:

What you need:

  • 2 cups of all-purpose flour
  • 2 teaspoons of instant yeast
  • 4 tablespoons of white sugar
  • 1/2 teaspoon of salt
  • 1 tablespoon of vegetable oil, plus more for frying
  • 2 cups of warm water

What to do:

  1. In a large mixing bowl, combine the dry ingredients: all-purpose flour, salt, instant yeast, and sugar.
  2. Whisk the dry ingredients together until well incorporated.
  3. Add a tablespoon of oil to the bowl with the dry ingredients and mix well.
  4. Slowly pour warm water into the bowl, stirring continuously to form a thick batter.
  5. Cover the bowl with a clean kitchen towel and let it rise for approximately an hour until the dough doubles in size
  6. Gently mix the batter and allow it to rest for another 10 minutes.
  7. In a large pot, heat vegetable oil over medium heat for deep frying.
  8. To test if the oil is hot enough, drop a small amount of the batter into the oil. If it sizzles, it is ready for frying.
  9. Using a spoon or ice cream scoop, drop dollops of the batter into the hot oil and fry until golden brown on both sides.
  10. Once cooked, remove the fritters from the oil using a slotted spoon and place them on a paper towel to absorb any excess oil.
  11. Serve the fat cakes warm with your choice of dipping sauce or topping, and enjoy!
