Method:

  1. Begin by heating the milk with Rooibos, orange peel, and a cinnamon stick until it boils. Let it steep for 30 minutes, then filter it.
  2. Combine cornstarch, flour, and sugar in a bowl. Blend in the egg yolks and 125ml (½ cup) of the heated milk to create a smooth paste. Gradually mix in the rest of the milk, adding 125ml (½ cup) at a time, into this paste. Transfer the mixture to a saucepan set over low heat,
  3. stirring continuously until it thickens, which should take around 10 minutes. Take it off the heat and mix in the butter while it’s still warm. Let it cool down and then chill it in the fridge for 30 minutes.
  4. Heat the oven to 180°C ahead of time. Once the soufflé mix is cool and you’re ready to bake, beat the egg whites until they form soft peaks. Gently fold these into the chilled base, using a ratio of 1 part milk tart mixture to 2 parts egg whites. Place the mixture into individual ramekins, smoothing the surface with a palette knife or the back of a spoon. Dust the top with cinnamon sugar and bake in a water bath for 10 minutes.
