  • 15ml lemon juice; 5ml almond essence;
  • fresh lemon zest;
  • boiling water.

Step-by-Step Tamboesies Recipe

Pastry Squares:

  1. Thaw the puff pastry in the refrigerator overnight. Preheat the oven to 200°C.
  2. On a floured surface, unroll the puff pastry and gently smooth it out with a rolling pin, being careful not to roll it too thin.
  3. Cut the dough into 4 x 4 cm squares and place them on a greased baking tray, ensuring there’s space between each piece.
  4. Bake for approximately 12 minutes or until the squares are golden brown and puffed up. Remove from the oven and let them cool completely.

Custard:

  1. Reserve a few tablespoons of milk and bring the rest to a boil.
  2. Combine the sugar, custard powder, cornflour, and salt with the reserved milk. Add a bit of the boiling milk to this mixture, stir well, then incorporate it into the rest of the boiling milk in the pot.
  3. Cook while stirring constantly until the mixture thickens, then remove from heat. Stir in the vanilla essence and cover with a damp cloth to prevent a skin from forming. Let it cool.

Topping:

  1. Mix the icing sugar with the lemon juice and a small amount of boiling water to create a thick paste.
  2. Add the almond essence to the mixture, ensuring it remains spreadable. Assemble the tamboesies quickly to prevent the icing from drying out.

Assembly:

  1. Using a sharp knife, carefully split the baked squares. Add a dollop of custard to the bottom half of each square, then top with the remaining pastry half. Drizzle a small amount of icing over each filled square and garnish with fresh lemon rind.
  2. Serve once the icing has set.
